This avocado and spinach salad is built around contrast: tender spinach, creamy avocado, crisp cucumber, a sharp lemon dressing and a salty or crunchy finish. It is a dependable base rather than a rigid formula—add beans, eggs, chicken or toasted seeds when it needs to become a meal.

Ingredients
- 5 ounces baby spinach, washed and dried
- 1 ripe avocado
- 1/2 cucumber, sliced
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and black pepper
- Optional: feta, toasted pumpkin seeds, chickpeas or a boiled egg
How to Make Avocado and Spinach Salad
- Dry the spinach. Water clinging to the leaves dilutes the dressing.
- Whisk the dressing. Combine oil, lemon, mustard, salt and pepper in the serving bowl.
- Add vegetables. Toss spinach, cucumber and tomatoes lightly in the dressing.
- Cut avocado last. Halve, pit, slice and add it immediately before serving.
- Finish. Add feta or seeds and taste before adding more salt.
How to Keep Avocado From Browning
Acid slows surface browning but does not stop it indefinitely. Keep the avocado intact until the final step, coat cut surfaces with lemon dressing and serve promptly. For packed lunches, carry the avocado half and dressing separately, then assemble at the meal.
Turn It Into Dinner
Add a warm protein or hearty pantry ingredient: chickpeas with smoked paprika, sliced chicken, salmon, lentils or a soft-boiled egg. If you are working from what is already in the fridge, use the same “base + protein + crunch + acid” structure in a recipe with ingredients you have rather than buying a long list for one salad.
Variations
- Southwest: corn, black beans, cilantro and lime.
- Mediterranean: feta, olives, chickpeas and oregano.
- Nut-free crunch: toasted seeds or crispy chickpeas instead of nuts.
