A recipe serving size calculator applies one multiplier to ingredient quantities: desired servings divided by original servings. That arithmetic is simple. The difficult part is knowing what does not scale in a straight line—pan area, baking depth, seasoning, thickening and cooking time.

The Serving-Size Formula

Scale factor = desired servings ÷ original servings. Multiply each ingredient by that factor.

Example: a recipe makes 4 servings and you need 10. The factor is 10 ÷ 4 = 2.5. A recipe using 2 cups of broth needs 5 cups; 1 teaspoon of cumin becomes 2.5 teaspoons as a starting amount.

How to Use the Calculator

  3. Read the multiplier and scaled quantities.
  4. Rewrite the entire ingredient list before cooking so you do not switch between old and new numbers.

Ingredients That Usually Scale Directly

Broth, chopped vegetables, rice, pasta, beans and portions of meat usually begin with the same multiplier. “Usually” matters: the cooking vessel must still hold the new volume, and evaporation changes when depth or surface area changes.

Ingredients That Need More Judgment

Salt, hot spices and extracts

Calculate the full amount but consider adding 70–80% first, then taste when safe. Salt may already come from broth, cheese or sauces.

Leaveners and baking ingredients

Cakes, breads and custards are sensitive systems. Large scaling changes can alter mixing, heat transfer and structure. For more than a double batch, separate batches are often more reliable than one very deep pan.

Thickeners

Flour, cornstarch and reductions depend on liquid, surface area and simmer time. Hold back a small portion and adjust after the mixture heats.

Eggs

Whole eggs are awkward at fractional quantities. Beat one egg, weigh or measure it, then use the needed fraction. Keep raw egg handling sanitary.

Pan Size Does Not Follow Serving Count Alone

For baked food, preserve a similar depth. Doubling batter in the same pan makes a thicker center that cooks more slowly while edges overcook. Two identical pans are often safer than one improvised deep vessel. Do not fill pressure cookers, slow cookers or mixers beyond their manufacturer limits.

Cooking Time Is Not Multiplied by the Scale Factor

A double batch rarely needs exactly twice the time. A larger pot may take longer to return to a simmer, but small food pieces still cook based on their size. Use temperature, texture and visual cues from the original recipe rather than multiplying minutes.

Common Conversion Anchors

NIST lists common approximate cooking equivalencies: 1 teaspoon is 5 milliliters, 1 tablespoon is 15 milliliters, 1 cup is 240 milliliters, 1 ounce is about 28 grams and 1 pound is about 454 grams. Volume-to-weight conversion still depends on the ingredient—a cup of flour does not weigh the same as a cup of water.

Scaling Down Safely

Smaller batches can overcook because shallow food heats quickly. Use a smaller pan, start checking earlier and preserve the original food depth when possible. For a sauce that reduces, the wider pan may evaporate too quickly even if the ingredient math is exact.

How do I scale 4 servings to 6?

Divide 6 by 4 to get a factor of 1.5, then multiply each quantity by 1.5. Review pan size, seasoning and cook time separately.

Should I round fractions before cooking?

Round at the end, not during each calculation. For forgiving dishes, a practical spoon or cup fraction is fine. For baking, weight is usually more reliable than repeatedly rounded volume measures.

Why did the amount scale but the recipe fail?

The calculation preserves ratios, not heat transfer. A deeper pan, crowded skillet or overloaded mixer changes how the food behaves. Split large batches and use doneness cues.
